      Mountain Man Breakfast

      Gerry Pierce sends this Dutch Oven recipe for Mountain Man Breakfast. This looks delicious!

      "Gotta say Jack, I really enjoy your site. It has been a wealth of knowledge 
      in the last year and I check it at least once a week looking for new things. 
      Here's a recipe to add:"

      Mountain Man Breakfast
      1lb bacon cooked in the bottom of the d.o., remove.
      brown 1 onion, remove.
      1 bag hash browns cooked (covered) in bacon grease (20 minutes?) 
      add 1 dozen eggs scrambled, cook (covered) until gloss is gone..
      dump bacon and onion on top, cover with 1 lb shredded cheddar cheese, Cover 
      and cook until cheese is melted. 1 jar salsa dumped on top. UMMMM!  and in a 
      dutch oven  (about 325 degrees, 8-10 coals on bottom, 10-12 on top) to make 
      it taste even better!!

      Larry Jecker's Easy Chili

      Ingredients:
      1 lb. Ground Beef
      1 Medium Onion
      1 Can Chili Beans
      1 Can Enchilada Sauce (Hot or Mild)
      1 Can Tomato Soup
      1  1/2 cup water

      Brown ground beef and add onion about half way through.  Add remaining ingredients and simmer.  For Chunky chili replace tomato soup with stewed tomatoes. 

      "You will be surprised how good this simple recipe tastes and how well it travels."


      Mock Turtle Soup

      "Below is a recipe for Mock turtle soup. You could use real turtles, I suppose, but the shells are hard on your teeth."

      1 pound ground beef
      2 qts. water 
      1 hard-boiled egg, no shell 
      1 8 oz bottle catsup 
      1 onion, chopped
      1 lemon (juice & rind) 
      1/2 tsp. allspice
      1 med. potato, grated 
      2-3 carrots, grated
      ground cloves to taste
      vinegar, Worcestershire to taste

      Brown beef, drain, rinse. Add everything else. Bring to a boil, then simmer for 30-60 minutes.

      Serves 6 or so.

      "This soup is good even if you get a hare in it."



      Creamy Ham & Vegetable Dijon

      Prep time:  15 minutes
      Serves 4

      1 can (10-3/4 oz) condensed cream of chicken soup
      2 tsp. Dijon mustard
      3 cups diced cooked ham
      1 can (14-1/2 oz) peas and carrots, drained
      1 can (8 oz) French style green beans, drained
      1/2 cup water or milk
       

    • Blend soup, 1/2 cup water or milk, and mustard in saucepan. Add ham; cook 3 minutes.
    • Add vegetables; cook 3 minutes.
    • Serve with noodles or rice
